Simon the spy turns 6

He finally wore me down. This year Simon, who has become a bit of a bossy pants, finally had his Power Ranger Party.  The party started off with the boys having to attend Power Ranger training camp. Upon completion, they were rewarded with a gold belt, sword and mask.  Ninja sushi and fruit swords kept the rangers powered up for the rest of the afternoon!

This 6 year old kid skips everywhere he goes which never fails to put a smile on my face.  He’s become very crafty when it comes to money and even though he may only earn 25 cents a job, he’s learned to save up.  His idea of a day well spent is playing Minecraft from sunup until sundown. On cold days he often wishes there were a coat for his pants.  Phrases that often come out of his mouth are: “I’ll punch you in the armpit!”, “No mucho blah blah blah”,  and “I’ll have the usual”, which means cheeseburger with extra pickles. And much to my chagrin if he’s not actually farting then he’s probably talking about it.  It always a world of randomness with Simon!

“You think this is about SUSHI?” –Celia from Monsters Inc.

I’ve been wanting to make these since our trip to Victoria a year and a half ago.  The boys visited the Victoria Bug Zoo — not sure how I got out of that one;) and were sent home with the recipe for BUG SUSHI! Everyone in our family loves sushi, even Noah, in spite of eating a large glob of wasabi one time thinking it was bubblegum!  I don’t think he’ll make that mistake again…

Mock Sushi

1/4 cup butter                                                               6 cups Rice Krispies

4 cups mini marshmallows                                       Candy-swedish fish, sour strings, gummy worms….

1-2 boxes of fruit leather or fruit by the foot

Line baking sheet with wax paper.  Melt butter in a large saucepan.  Add marshmallows and stir until smooth.  Remove from heat and stir in the rice krispies.  Place plastic baggies on your hands and spread a thin layer on to baking sheet.  Place a row of candy an inch from the edge. Roll marshmallow mixture over the worms just enough to encircle the candy.  Stop and cut the log away from the rest of the mixture.  Continue with this method to make as many logs as you can.  Wrap each log with fruit roll up.  Slice each log into 1 inch thick slices.
